2020-05-30 file created Slaw -1 "hard" cabbage head, cut in quarters & grated either on a hand grater or in a food chopper. - 1 med. carrot - grated or chopped (I prefer grated) - 1 med. onion (optional to taste) - 1 tbsp. sweet pickle relish - 1 flat tsp. sugar [level tsp] - Salt to taste - 1 med. tomato - chopped in 1 in pieces (Peel tomato) Add tomato after placing in a lg. bowl. Add mayonnaise approximately 1/2 cup - more or less to desired consistancy. I also add a dash or two of celery seed or [celery] salt or fresh celery, 1 stalk. Fresh makes it better. Cut fine. Good luck Gana NOTE: Gana helped me make this in her kitchen one day. It may be the same day she helped me make her roast beef. She said the tomato must be ripe but very firm and chilled (near frozen)before you peel and dice it or it will turn to mush! She diced it in very tiny cubes a little less than a 1/2 inch. She sprinkled the sugar like you would sprinkle salt no more than a level tsp. full, maybe less. She used a hand grater, the type that has several sides. Holes in the grater are about 1/4 in. in diameter (the largest). She grated the cabbage, the onion and carrots on this side -- not too fine and not too coarse. No one else I know adds fresh tomato in cole slaw. Hers was so sweet because of the tomato, the sweet relish, and the added sugar. ~ Ron.V ~
